Do you love curry? What kind of curry you love if yes…This is another type of Nyonya curry that I being tried. Have you hear about Perut Ikan? This is main ingredient used in Spicy and sour fish curry. Perut Ikan is the intestine of fish that normally discard by people. After add in the fragrance herbal ingredients, this will become spicy and sour curry.
Fragrance ingredients: (mashed)
Dry chilies 15 (soak to soft)
Shallot 120g
Garlic 50g
Shi Gu Zai 4
Ingredients A:
Cooking oil 2 tbsp
Pepper mint leaves 100g (cut into slices)
Ginger leave 5 (cut into slices)
Feng Gan Leave 3 (cut into slices)
Kim Feng Leave 50g (cut into slices)
Pineapple 300g (cut into cube)
Little brinjal 1 (remove skin)
Long bean 150g (cut into small pieces)
South ginger 1 tbsp (cut into small pieces)
Xiang Mao 2 (cut into pieces)
Dried Asam 1 (cut into pieces)
Asam Paste 2 tbsp (add into 1200ml water and combine well)
Fish intestine (seasoned) 100g (soak in water and cut into pieces)
Seasoning ingredients:
Ginger powder 1 tsp
Yuan Xi powder ½ tbsp
Belacan powder ½ tsp
Sugar 2 tbsp
Salt ½ tsp
Soya sauce 1 tbsp
Ingredients B:
Shrimp 500g
Concentrate coconut milk 200ml
Method:
1. Heat up wok, fry the fragrance ingredients, add in all the ingredients A and seasoning ingredients and cook till boil.
2. Change to low flame and cook for another half an hour.
3. Add in shrimp and cook for another 15 minutes.
4. Lastly add in concentrate coconut milk and cook for another minute.
5. Dish up and ready for serve.
